Tomatoes may matter more to the liver than to the salad bowl. An exploratory randomized trial reports that adults with metabolic dysfunction-associated steatotic liver disease who consumed a daily mix of raw tomatoes and tomato sauce showed a greater drop in hepatic fat, as assessed by controlled attenuation parameter imaging, than peers on a tomato-free diet.

What stands out is not dramatic weight loss but the lack of it. Participants assigned to about two hundred grams of raw tomatoes plus fifty grams of tomato sauce each day over several weeks improved their CAP-defined hepatic steatosis without marked changes in body weight, fasting glucose, or standard lipid profiles, suggesting a direct hepatic effect rather than a generic metabolic reset.
This pattern hints that tomato bioactives, including lycopene and other carotenoids, may influence hepatocellular lipid accumulation and possibly oxidative stress pathways more specifically than typical dietary tweaks that ride on calorie cuts. The study remained small, the intervention short, and hard clinical outcomes such as fibrosis progression or incident cirrhosis were not assessed, leaving the real therapeutic weight of tomatoes still under active question.
